Strawberries are going cheap at the moment (2 punnets for $3!) so I did some ice-cream experimenting with some strawberries.

Experiment #46: Strawberry Gelato-Cream
Recipe:
* 250ml boiling water
* 1 sachet low-calorie strawberry jelly crystals
* 4 T Erythritol
* 1 punnet strawberries
* 250ml skim milk powder
Dissolve the jelly crystals in the water; add the Erythritol. In another container, puree the strawberries. Mix in the jelly mixture. Add the skim milk powder and mix. Process in the ice-cream machine.
Result: Texture nice and creamy; taste was middling-strong strawberry, but I'm not sure whether it would have been better without the milk or not; I seemed to notice the "artificialness" of the strawberry-jelly flavour more than when I'd made gelato without the milk; maybe without the milk I'm expecting the stronger flavour, or that the milk dilutes the flavour enough that it isn't quite as good. I'm really not sure.
Lessons: Perhaps I should let gelato be gelato, and not mix jelly-crystals with milk.

How about a strawberry water ice?

That would remove the need for jelly.
