A very hot day is a good day to make ice cream.

Experiment #38: Apricot Ice-Cream
Recipe:
This was inspired by the pineapple sorbet recipe on this page.
* 6 apricots
* 5 T Xylitol
* 1 T Erythritol
* 5 T Splenda granular (because the apricots were tart)
* 1 t Xanthan gum
* 125ml skim milk powder
* 125ml water
Puree the apricots, mix in the xylitol, erythritol, Splenda, Xanthan gum. In a separate bowl, mix the milk and water. Whip with an electric beater for ten minutes, until stiff (sort of like egg whites). Stir the whipped milk into the fruit mixture. Spoon into the ice-cream maker; churn.
Result: This was delicious even before it was made into ice-cream; I'd like to use it some time as a sort of "apricot cream". The ice-cream was lovely and creamy, though the taste was very mild.
Lessons: (a) the whipped milk thing works! (b) it may need a little stronger flavour, though (c) the whipped milk by itself has a strong "milk" flavour, which means it's probably not suitable for plain vanilla

42°!WOW - uh...now this must be really exhausting. We had 35°last summer for a week and it was hard time for working because there is almost no air-conditioning here in houses.
At the moment, snow is falling like mad here, like a coco-nut-ice-cream...:-)
