The thing about vanilla is that if you've conquered it, everything else is easy. Another ice cream experiment...

Experiment #30: Vanilla Ricotta ice cream #2
Recipe:
* 500g Perfect Italiano Smooth Ricotta cheese
* 1 t vanilla powder
* 1/2 t Xanthan gum
* 1/2 t Guar gum
* 250ml boiling water
* 2 T Xylitol
* 2 T Erythritol
* 1 sachet Splenda (equiv 2 t sweetness)
Result: Texture look, a crumbly creamy look; texture feel, creamy, but with a similar odd sort of mouthfeel as last time, but without the graininess; taste, vanilla, but not sweet enough, it tasted like, well, frozen ricotta.
Lessons: (a) better quality ricotta does do better (b) add more sweetener next time
