So, I thought I would try out more with my faux oat cream...

Experiment #32: Gingerbread Ice Cream with yoghurt and oat "cream"
Recipe:
* 250ml natural non-fat yoghurt
* 250ml of "oat cream"
* 3 T erythritol
* 2 T xylitol
* 2 t cinnamon
* 2 t ginger
* 1/4 t nutmeg
* 1/4 t cloves
* 2 T Splenda granular
I tasted the mixture and thought it was too yoghurty, so I added
* 100ml water
* 1 t cinnamon
* 1 t ginger
Result: Texture, creamy with a touch of crumbliness; taste... oops. Still too much yoghurt, and adding the ginger just made it too gingery.
Lessons: (a) don't put in so much yoghurt (or use something else) (b) don't put in so much ginger.

Still probably worth trying again, though.
