While eating some lovely cold watermelon, I was reminded of the fact my father told me last Tuesday: cows love eating watermelon rind.

Maybe that will help those of you writing fantasy to add a bit of verisimilitude. 8-)

Since I generally don't go for pickled anything, I doubt that I would enjoy pickled watermelon rind, though.

Now I'm wondering how common watermelon was in Oxford supermarkets in the late '80s, because I can totally see Imogen feeding the rinds to cows while picnicing by the Cherwell with her love-interest in the next-but-one novel.
