Shake it, Shake it Good

Igor, pass me the strawberries. No, don't thaw them first!

Additional notes on Experiment #72: I forgot to mention that the ice cream had just a bit of a greasy aftertaste; I expect it was all the cream. Also, the next day, the portion which had been frozen overnight was easily scoopable, which is also probably due to the cream.

Experiment 73: Strawberry Diet Shake Ice Cream

Ingredients:

* 2 packets of strawberry diet shake
* 1/2 packet frozen strawberries
* 200ml boiling water
* 3T Natvia
* 1 small lump cocoa butter
* 200ml Skim Milk

Instructions:

* Put strawberries and diet shake powder in container
* Pour boiling water into pyrex jug, add Natvia and Cocoa Butter
* Stir until Natvia dissolves and cocoa butter melts
* Pour water mix into mixing container
* Pour milk into mixing container
* Blend with stick-blender until frozen strawberries are pureed and everything is smooth
* Process in ice-cream machine

Whys: I wanted to try a diet-shake ice-cream again; I'd been looking through my old entries and realized that that was one of the early things I did, and I wanted to try again with stuff I'd learned since, such as using Natvia. I wanted to try mixing fruit in with the diet-shake too, instead of just making it from the shake stuff, because then I could use two portions of shake instead of three, and thus divide the result into two instead of three (two is easier). Besides which, one is supposed to have the shake with fruit anyway.

I also wanted to experiment with cocoa-butter, since I came across this article which discussed its merits in ice-cream making. Yes, I know adding fat to a diet-shake is counterproductive, but it wasn't that much...

Result:

* texture - creamy soft, fluffy - more fluffy than Experiment #72, anyway. Also, no greasy mouthfeel at all.
* colour - light pink
* taste - mild strawberry

Verdict: Yum!

Lessons and things to try in future:

1. Mixing fruit with the diet-shake works.
2. Try with cocoa butter again. (Note to self: replenish my cocoa butter supply)
3. Try stewing the strawberries first, to intensify the flavour
